As a result, the soup is beloved for its simplicity and deep, comforting flavors that showcase the essence of Italian cuisine.

Ingredients

Core Ingredients

  • Tomatoes: Fresh Roma or plum tomatoes offer the best flavor. High-quality canned tomatoes work well too.
  • Spinach: Fresh spinach leaves are preferred for their texture and color.
  • Onion and Garlic: Essential aromatics for a flavorful base.
  • Vegetable or Chicken Broth: Acts as the soup’s foundation, adding richness.

Optional Additions

  • Cream: For a velvety texture.
  • Parmesan Cheese: Adds a savory umami boost.
  • Red Pepper Flakes: Provides a touch of heat for spice lovers.

Instructions

1. Prepare the Ingredients : to begin, dice 2 cups of fresh tomatoes or use a 15-ounce can of diced tomatoes. Then, wash and chop 1 cup of fresh spinach leaves. Finely dice 1 medium onion and mince 2 garlic cloves.

2. Cook the Aromatics : first, heat 1 tablespoon of olive oil in a large pot over medium heat. Once heated, sauté the onion and garlic for 2-3 minutes until fragrant and translucent.

3. Add Tomatoes and Broth : next, add the tomatoes, cooking for 10 minutes to let the flavors meld. Afterward, pour in 4 cups of broth and bring the mixture to a gentle boil.

4. Incorporate Spinach : reduce the heat and simmer for 15 minutes. During the last 5 minutes, add the spinach, stirring until wilted.

5. Season and Serve : finally, adjust seasoning with salt, pepper, and Italian herbs to taste. Ladle the soup into bowls and garnish with parmesan or croutons.
