It’s a recipe perfect for dinner parties, gourmet meals at home, or when you want to wow guests with your culinary skills.

Ingredients

Scale

For the Custard:

  • 1 cup fresh lump crab meat (or jumbo lump for a more premium texture)
  • 1 cup heavy cream
  • 3 large egg yolks
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon finely chopped chives (optional)

For the Topping:

  • 2 tablespoons granulated sugar

Instructions

Prepare the Custard Base

Preheat your oven to 325°F (160°C). In a mixing bowl, whisk together the heavy cream, egg yolks, Dijon mustard, salt, and pepper until smooth.

Incorporate the Crab Meat

Gently fold in the crab meat, taking care not to break apart the delicate pieces. This ensures a uniform texture throughout the custard.

Divide and Bake

Pour the mixture into ramekins and place them in a deep baking dish. Add hot water to the dish until it reaches halfway up the sides of the ramekins. Bake for 25–30 minutes or until the custard is set but still jiggly in the center.

Cool and Caramelize

Allow the ramekins to cool to room temperature, then refrigerate for at least 2 hours to let the flavors meld. Just before serving, sprinkle granulated sugar evenly over the tops and caramelize using a kitchen torch until golden and crisp.
